I am absolutely obsessed with these mini morning quiches! I prepare them Sunday evening and pop them in the microwave for a quick and easy nutritious breakfast!

 I thought it would be super hard adjusting to this whole live on your own thing, but so far I have loved it! I am loving late night TV watching, while snacking on some of my favorites, blogging and painting my nails! It's good for the soul, friends! 

What We've Been Up To

Life has been crazy busy here and we have had to squeeze in date night during Dave's dinner break at work! Nothing like the hospital's cafeteria for a classy date! In all honesty, it was pure bliss! Time spent with this man is truly a blessing! 


What I'm Dreading
On Saturday my future in-laws are all packing up and heading to Bay View, Michigan for a week long vacation! Bay View holds a special place in my heart because it's where David and I got engaged last year...

What I'm Doing This Weekend
I am trucking home this weekend to celebrate this girl's high school graduation!

I am so excited to see all of my friends and family!


And just for fun, here is a little flash back to my graduation party over 4 years ago with my grandparents! Two things stick out in this picture... holy short hair and holy burnt face!

I am also attending a bridal shower for my sweet friend Katie! I can't wait to shower her with lots of love! We are both in each other's weddings a little over a month apart! So excited!

Fourth Of July Plans
The fourth of July is my sweet grandma's birthday! We always celebrate with lots of outdoor games, yummy food, fireworks, and swimming with my dad's whole side of the family! The fourth is one of my favorite days of the year! I can hardly wait!

Mini Morning Quiche

I found myself rushing around in the morning and only having time to grab a granola bar on my way out the door. Don't get me wrong, I LOVE me some granola, but it got real old real fast. That's when my genius "sister-in-law to be" suggested that I make mini quiches! 


These suckers have changed my life! I am finally eating a breakfast that is beyond tasty & the best part is it's quick and easy on the go, too! 


Here's how you can whip these mini morning quiches up in less than 35 minutes! 


Your Grochery List: 
Olive oil or coconut oil 
1 red onion
1 tomato
1 green pepper
5 slices of bacon 
A dozen eggs
1/2 tsp of salt
A small can of mushrooms
2 garlic gloves 
1/3 cup of milk of choice
3 oz. of shredded cheese
1/8 tsp of black pepper
1/3 cup of all purpose flour
1/4 cup of finely chopped cilantro or baby spinach


Directions: 
Preheat your oven to 350 Degrees
 Grease or use non-stick spray on a muffin tin.
(I used a mini square brownie pan)
 Put a tablespoon of olive oil or coconut oil in a skillet pan and sauté your choice of meat (I chose bacon) over medium.  While sautéing I threw in teaspoon of minced garlic and a dash of salt to help season the bacon. 

Once I sauté bacon I always place it on a paper towel to soak up all of the fatty juices. 

Next dice up your veggies!

 I chose to use tomatoes, green peppers, mushrooms and red onions, but the options are ENDLESS! The more the merrier! Mix in all of your favs to personalize your mini morning quiches to suit your fancy! 

Throw it all in a mixing bowl! 

Look how pretty the layers look! 

Mix in the bacon and stir stir stir! 

Now grab a dozen eggs, a whisk, and another mixing bowl/measuring cup!


Crack those eggs and get to whisking! 

Once the eggs are whisked together, add in the milk, flour, salt and pepper and continue whisking until smooth. 

Then add the cheese and the veggie/meat mixture to the bowl and mix until your heart desires! 

You are ALMOST DONE! Fill each of the little compartments 3/4 of the way full with your yummy concoction.

Pop the baking tray in the oven for 25-30 minutes, or until firm.


When they're done, they should rise similar to this!

You can store these in ziplock bags and place them in the freezer, or if you're like me, you can store 5 in a glass container in the fridge so you have one for every day of the work week!

Friday Favorites

Happy Friday Everyone!!! 
The weekend is finally here!!! I am kicking off the excitement with another link-up of Friday Favorites with some of my favorite bloggers. 1. Spring handbags!!!!

A few months ago I blogged all about the perfect spring handbags.

Every beautiful bag you could ever imagine and more! I still love my blue bag more than anything but since starting my new job I needed something a little bigger to lug around my laptop and other work materials. My grandparents are absolute gems and hooked me up with the perfect briefcase as a graduation present.


I love how much I can fit in this cross body briefcase by Coach. It's nice and spacey without being to big and bulky.

Now this pink jewel of a bag is the queen of all briefcases. Look how adorable and simplistic this briefcase is. If you want to look like you belong on Legally Blonde than you need to purchase this bag and rock it out in the workforce.

I am secretly swooning over this brown vintage briefcase. Partially because its color is titled espresso and it's hard not to love anything somewhat related to coffee, and partially because look at how dang sleek this bag is. Just picture yourself prancing into the office with this thing resting on your shoulder.. you would be turning heads and dropping jaws! 


2. All of the adorable chairs at Target! 

I am telling you people, Target is the place to go! They always have wonderful sales going on and right now they have 10% off select chairs! Check out some of these beauts! 

I think this tufted upholstered arm chair belongs in my living room. I am swooning over how adorable it is. I just know it has to be equally as comfy! 

For some reason this crazy chair has completely stolen my attention. I just see it being the perfect accent chair in a little girls bedroom or a fancy, fun home office workspace! Maybe I can convince my better half that we can add this pretty thing into the living room mix too! ;)


Okay, now realistically, this may be the chair that wanders its way into my life. I think the future hubby would be content with a recliner and as far as recliners go, this little guy is pretty cute! 

#3. My Family

I really hit the jackpot in the family department. I am blessed way beyond measure with the most supportive and loving family members.
                
Last week my parents and grandparents put all of their effort and energy into helping me pack up my life as I once new it and lug all my belongings five hours to Southwestern Indiana. Talk about saints. These people are the most selfless people I have ever met. These people are my favorites.

They provide me with so much laughter and joy! Never a dull moment with these lovely people!

Thankful Thursday

My sweet bestie Addie and I are kicking off our Thursday with lots of thankfulness! 
This past week has been a complete whirlwind for me. I graduated from college, moved into my very first apartment and started my first ever real full-time job. Just a tad overwhelming to say the least. Despite all of the chaos I can't help but sit back and reflect on all I have to be thankful for. 

Just as our "thankful Thursday" logo says the Bible tells us to give thanks in all circumstances for this is God's will for us. In my eyes, truer words have never been spoken. No matter how hard a situation may be, how bad the struggles we are going through are, whether we just won a million dollars on a lottery ticket or we just scored a huge bonus at our job, there is always always something to be thankful for. 

With that being said, here are the things that I am extra thankful for this week!

1. How much support, encouragement and love I felt throughout my college experience from my family. They truly pushed me to be the best student I could be and I don't think I would have made it through college without each and everyone of them! 

2. My wonderful Ann Tweedale sisters. Love them more than anything.

3. My apartment! A place I can officially call my own.  

4. A wonderful second family that I officially get to join in October. Blessed beyond measure for all of my in-laws and the love and joy that add to my life. 

5. My grandparents and parents for all they have done to help make my life transitions go smoothly. They truly have been my rock and support through all of these big changes recently.
